Rogga’s Rolls
Rogga's Rolls is a much-loved feature on the Tunnbrödrullens vänner ("Friends of the Flatbread Roll") Facebook page. The rolls come and go in the feed, but here on this page we try to collect and preserve every roll that's been featured, for the future – so they're never lost.

Rogga A Larsson
Digital creator with a focus on Swedish home cooking, among other things, also known as Mr Rotmos. He is perhaps best known for his creative and sometimes rather unconventional flatbread roll recipes, which he has been sharing with the Friends of the Flatbread Roll for quite some time.
The forbidden fruit
A real hearty Sunday roll.
- Split and fried thick kabanos sausage.
- Mashed potatoes with butter and cream.
- Fried smoked pork belly.
- Grilled bell pepper.
- Pickled jalapeño.
- Fried onion.
- Chili mayo.
- Dijon mustard.
- Buttered, warmed flatbread.




We've known for ages that apple and pork are a match made in heaven, so the perfect drink for this roll is a properly iced apple cider with plenty of lime.
The Classic
Lovely summer evenings now........parked in front of the telly on the lazy couch. The Swimming Europeans and Athletics Europeans are what's drawing me in. And a little roll-rascal fits perfectly as TV snacks.
It had to be a classic:
- The twin pair of Vienna sausages, warmed in a brine of allspice, bay leaf, thyme, salt and a little sugar.
- Delicious mash made from floury potatoes, butter, crème fraîche, salt and pepper.
- Shrimp salad with hand-peeled shrimp, mayonnaise, horseradish, chives, parsley, salt, white pepper, and chopped yellow onion that I cured in salt, sugar and lemon before it went into the mix.
- Fried onions made from thinly sliced yellow onion coated in wheat flour before frying.
- A few squirts of ketchup and mustard.
- And the buttered, warmed flatbread.

Great fuel-up ahead of the quarterfinal between Spain and Belgium. My gut feeling is that Belgium takes this one.
A Swedish Classic
A Swedish classic.
I was actually going to post this yesterday, on Sweden's National Day. But I simply forgot. Sweden's contribution to the fast food scene.
The flatbread roll.

- Mashed potatoes made from floury organic potatoes, butter, cream, salt and white pepper.
- A little shrimp salad with shrimp, mayonnaise, horseradish, sriracha, blanched carrot and yellow onion.

The Breakfast Roll
Today is Flatbread Roll Day.
And of course that means having a roll-rascal for breakfast.
- Fried kabanos sausage.
- Crispy bacon.
- Pan-fried potatoes.
- Creamy truffled
- Scrambled eggs.
- Roasted cocktail tomatoes.
- Fried onion.
- Quick-pickled cucumber.
- Dijon mustard and sriracha.


A four-fold cheer for the flatbread roll and all flatbread roll friends. Hooray hooray hooray hooray.
The Tuesday Roll
- Fried fresh salsiccia with garlic and herbs.
- Smooth and fine mashed potatoes with butter and cream.
- Cucumber mayonnaise.
- Fried onion.
- Crispy bacon.
- A few squirts of ketchup and mustard.



A delicious little afternoon snack.
Single Sausage Saturday
- Fried chili mango sausage.
- Buttered, smooth mashed potatoes.
- Mayonnaise cucumber.
- Crispy bacon.
- Pickled yellow onion.
- Pickled jalapeño.
- Chili ketchup.



Tickled me to death, it's that good.
The Saturday Roll
With a few crumbs in my beard, I proudly present the Saturday roll.
- ICA's Mango Chili Sausage
- Samosa-inspired mash made from potatoes, peas, onion, bell pepper, butter and a homemade curry blend.
- Shrimp salad with shrimp, mayonnaise, pineapple, onion, pickled chili and hot sauce.
- Fried red Chinese cabbage.



The Sunday Roll
The Sunday roll turned into a two-course meal.
- Boiled ICA wiener sausage with the delicious mash,
- chili-spiked shrimp salad,
- fried shallots.
- Fried Stensåkra wild-garlic sausage with just as delicious mash,
- fried salad cabbage,
- crispy salsiccia,
- chili mayo,
- roasted pickled bell pepper.




Talk about a smashing success of a Sunday.
A Luxury Version of the Sunday Roll
Gave the Sunday roll a touch of luxury.
- Two fried fresh sausages from Köttkultur, kabanos-style.
- Wonderfully gooey and creamy lobster salad.
- The delicious, buttery mash.
- Crispy fried shallots.


My taste buds did somersaults, backflips, and started a moshpit on my tongue.
The Sunday Roll
- A split, grilled red wine chorizo from Härryda Karlsson.
- That delicious mash with plenty of butter and cream.
- Red onion caramelized in red wine, honey and thyme.
- Chili-hot mayonnaise with grilled bell pepper and chipotle Tabasco.


Maybe not the most photogenic filling for a roll. But holy macaroni, so damn good.
Surf Turf Umami Roll
- Split, grilled lamb sausage.
- Garlic and chili-sautéed vannamei shrimp.
- Samosa-inspired mashed potatoes.
- Soy mayonnaise.
- Fried shallots.
- Warmed, buttered flatbread.



Good grief, what a roll-rascal.
The Autumn Roll
Today, November showed its most autumnal side.
An even grey sky from morning to night, with a light drizzle for good measure.
So it had to be an autumn roll, to chase away the gloom and still make some sunshine in the hungry belly.
The twin pair of Vienna sausages.
Mashed potatoes with Västerbotten cheese.
Skagen-style crayfish salad.
A lovely crisp of smoked pork belly, chanterelles, shallots and kale.
Warmed, buttered flatbread.



Now the sun's shining again.
The Bacon Cheese Chili Roll
What could possibly go wrong there!?
And if you can get that together with a sausage and mashed potatoes into a roll-rascal, well then happiness is complete!
Split, bacon-wrapped and grilled thick kabanos sausage.
New potato mash with butter, crème fraîche, parmesan and cheese doodles.
Double-breaded and deep-fried shallots.
Chili cheese poppers made from edam, parmesan, cheese doodles, jalapeños, chili flakes and crème fraîche.
Grilled cocktail tomatoes.
Pickled red chili and a few squirts of sriracha.
Grilled, buttered flatbread.



Not the prettiest thing I've made, but holy cow, so darn good.
The After-Party Roll
Drunk food and late-night snacks at the after-party.
A flatbread roll, of course.
Lithells hot dog sausage.
Felix buttered instant mash.
Crispy bacon.
Prästost cheese.
Roasted onion.
Buttered flatbread.
Ketchup and mustard.


Slurp.
The Triple Barrel Roll
Gotta admit I've been slacking a bit on the roll-eating lately.
So tonight it was time to shape up, and I whipped up a tasty triple barrel.
The triplet trio of wiener sausages.
Mashed King Edward potatoes with butter, crème fraîche, freshly grated parmesan and a few turns of the pepper mill.
A shrimp salad made of shrimp (big surprise), mayonnaise, sriracha and blanched, diced onion and carrot.
Freshly fried yellow onion.
Buttered, warmed flatbread.



So good....I promise.
The Lunch Roll
I have to apologize, roll friends.
It's been ages since I made a roll.
But today I managed to whip up a quick little, but seriously delicious, lunch roll.
Single barrel Vienna sausage.
Smooth and fine buttered mash.
Homemade mayo cucumber.
Fried yellow onion.
Buttered, warmed flatbread.
Ketchup and Dijon mustard.



Like I said...small but seriously delicious.
The Snack Roll
Turned into a quick little snack roll to silence the rumbling from the hungry belly.
The twin pair of wiener sausages.
Grilled flatbread.
Properly buttered mash.
Grilled bacon.
Grilled yellow onion.
Jalapeño-spiked cucumber mayo.
A few squirts of tabasco-sriracha.




Now it's quiet for a while.
The Old Man's Flatbread Roll
Realized I had homemade flatbread that my dad gave me, sitting in the freezer.
So I whipped up a quick little roll.
The twin pair of wiener sausages.
Dill and butter-seasoned crushed potatoes.
Fried yellow onion.
Shrimp salad with chili and horseradish.
A few squirts of ketchup and nose-tickling hot Dijon.

The Original
The original.
Here's my tribute to Elof "Loffe" Bråtfors, who at his grill kiosk Loffes Grill is said to have invented what we today love as the flatbread roll!
At Loffe's you'd get a boiled or grilled sausage with mash, ketchup, mustard and pickled cucumber relish, all wrapped in a flatbread.
With so few ingredients, you really can't hide behind cheap, bad-quality ingredients.
My tribute contains:
A mash of almond potatoes with crème fraîche, butter, salt and quite a lot of freshly ground white pepper.
Two grilled beef grill sausages.
Homemade pickled cucumber relish.
Heinz ketchup.
And Dijon mustard....to cut a bit against the sweet and tangy ketchup and pickled relish.
All lovingly wrapped in a buttered, warmed flatbread.



A super-simple roll, but so darn good.

Got inspired by a post the other day.
I present "The Missionary".
Two boiled sausages with mash
shrimp salad
roasted onion
ketchup and mustard, in a flatbread.



Plain and simple.

So we're running a roll special on the menu all weekend, starting today, Friday.
Grilled kabanos sausage,
buttered, smooth mashed potatoes,
Rogga's shrimp salad,
wild garlic ripple,
Mornington BBQ ketchup,
the chef-rascal's mustard blend
and fried leek.
All wrapped in a buttered, warmed flatbread.

The Sausage and Mash Roll
Hey guys...listen to this!!!
Imagine taking something as darn good as sausage and mash.
You top it with mayo cucumber, roasted onion, Heinz ketchup and a few squirts of Colman's mustard.
Then you roll it all up in a warm, buttered flatbread.
I know...that sounds completely darn crazy!
But wouldn't that be something?

The Pyttipanna Roll
The brain works in mysterious ways.
The second I spot a sausage-rascal I think... "hmmm...I wonder what kind of roll that sausage is destined to become?".
So tonight, when I peeked into the fridge, I found one lonely, poor Bromma grill sausage, some boiled potatoes and an egg rattling around in there.
"Ahhh, a pyttipanna roll"...my brain thought, quick as lightning.



Fried Bromma herb grill sausage.
Sautéed yellow onion.
Butter-fried crushed potatoes.
Bacon crisp.
Egg, sunny side up.
Salted pickle.
Colman's.
Sriracha.
Mayonnaise.
The New Year's Roll
A flatbread roll well worth its place on the New Year's Eve buffet.
Vienna sausages.
Potato purée with butter and crème fraîche.
Freshly boiled lobster.
Butter-fried asparagus.
Lemon crème fraîche with dill and chives.
Västerbotten cheese crisps.
Lumpfish roe.




Happy New Year, roll friends.
The 4th Advent Roll
Whipped up a really nice 4th Advent roll.
The twin pair of grilled merguez sausage.
Potato mash with Västerbotten cheese, butter and crème fraîche.
Crayfish salad made from crayfish tails, grilled cherry tomato, dill, mayonnaise and sriracha.
Grilled pickled bell pepper.
And a little fried red onion.



A pretty great Sunday dinner.
The Chorizo Roll
Call me one-track-minded, unimaginative, downright imbecilic even....but didn't it turn into a roll-rascal again today!?
Why yes, you bet it did!
Grilled chorizo.
Parmesan-spiked potato purée.
Chili mayo with jalapeños and roasted bell pepper.
Grilled yellow onion.
Pickled bell pepper.
Ketchup and sweet-hot mustard.



But if roll business is this darn good, well then you can call me whatever the heck you want.
The Plank Steak Roll
Someone thought I should make a roll with duchess potatoes.
So...said and done.
Here's my take on plank steak...in roll form.
Grilled Bromma kabanos sausage.
Gratinated duchess potatoes.
Grilled, bacon-wrapped green asparagus.
Grilled cocktail tomatoes.
Sauce béarnaise with a bit of browned butter.
And then I really went for it with some fried shallots.




The Saturday Roll
Who even thinks the thought 'fillet of beef'?
When you can have the twin pair of wiener sausages snugly nestled in parmesan potato purée, fried yellow onion, chili-spiked shrimp bits, coarse hot mustard, a few squirts of sriracha, all embraced by a warm, buttered flatbread!



The Asian Roll
Asia's flavor palette is pretty darn flamboyant, hot and sexy compared to our rustic, functionally Nordic palate.
I've been thinking a bit about how to make that work in a roll without it getting weird.
Gave it a shot today, and I think it turned out darn great...
Samosa-inspired mashed potatoes with potato, carrot, green peas, onion, garlic, cardamom, cinnamon, turmeric, chili, lemongrass and butter.
Raw slaw made from pointed cabbage, carrot, honey, sambal oelek, ginger, apple cider vinegar, garlic.
Shrimp salad made from shrimp, yellow onion, spring onion, mayonnaise, garlic and sriracha.
Two lovely merguez sausages.


The whole thing needs a sausage that won't get lost in this explosion of flavors...
Worked out great.
The Snack Menu
Well, I've gone and made a mess of things again...
And to top it off, a cat's snuck in among the ermines.
Put together a four-course snack menu for tonight.
So from left to right:
Vienna sausage with potato purée, shrimp salad and fried onion.
Grilled chili sausage with cucumber mayo, caramelized yellow onion and a lovely chive-spiked purée.
Fried kabanos sausage with truffle purée, serrano crisps, and pico de gallo.
And then, way in the back... the cuckoo in the nest.
Vanilla-cinnamon-roasted flatbread cylinder with apple compote, crème anglaise and mint.

Do I even need to say I'm not exactly suffering.
The Brunch Roll
Hungover and shaky?
Then a brunch roll hits the spot perfectly.
Sausage,
mashed potatoes,
white beans,
bacon,
egg,
roasted tomato,
sautéed pearl onion
and a fried egg.

A massive hit in my belly.
The Quick Roll
Worked late and hungrier than a wolf by the time I got home.
Gotta be a quick roll!!!
Get the frying pan going...
While the pan heats up, I cut potatoes into 1cm pieces and put them in a bowl with a little water and salt, cover with plastic wrap and pop it in the microwave for 5 minutes.
In go the sausages (Jalapeño Cheese Bomb) into the hot pan.
While the sausages fry up nicely, I whip together a quick shrimp salad and chop some spring onion.
Warm a flatbread in the oven while mashing the freshly cooked potatoes with quite a lot of butter and a little freshly ground white pepper.
In go the ingredients into the flatbread along with a few squirts of Johnny's and Heinz.
Roll it up and enjoy.


The whole thing done in 10 minutes!!!
