Saagmyra Hipster
Origin
In May during the covid year 2021, when Dalarna's Culture and Guide Association booked lunch at Sågmyra Café och Skafferi, they served their open flatbread roll for the first time.
Since then, Sågmyra Café and Skafferi have been offering their customers Open Flatbread Roll (also known as "flasher" or "hipster unrolled"), as an alternative to the more commonly used normal-rolled thin bread roll.
Different variants of Open Flatbread Rolls can sometimes be offered in restaurants where Flatbread Rolls are not normally served. Probably because the dish is then more reminiscent of the restaurant's normal range, while at the same time you want to present the dish in a way that is, for the target group, more appetizing.

Sågmyra Café & Skafferi
Turn-of-the-century inspired café - food service where you can try, among other things, an Open flatbread roll / Hipster Unrolled
The open flatbread roll is an excellent way to present high-quality ingredients in an advantageous way, but places higher demands on how to compose your ingredients so that they not only taste good, but also look good.
The most common way to serve an open flatbread roll is to place the flatbread on a plate, but variants where you cook the dish on a plank have also figured and given rise to the "Thinbread roll-plank" variant.
Recipe
Below follows the recipe for Sågmyra Café and Skafferis Sågmyra Hipster, adapted for the end consumer to prepare in a normal kitchen. The recipe is sized for 2 rolls.
The original can be enjoyed at Sågmyra Café and Skafferi. If you are on the go and want to eat in classic style, Sågmyra will of course roll the a regular flatbread roll if so desired.
Ingredients
Flatbread
- 1 large soft Rälta flatbread, split in two
- Butter to warm the flatbread in
The flatbread from Rälta comes in long rectangular sheets that are enough for two flatbread rolls each. It will then be a slightly smaller and tougher rectangular flatbread.

Rälta flatbread has been baked by the small family bakery Bergli bröd in southern Rälta since 1997.
Sausage
- 2 jalapeños- cheese from Martin-Servera
A coarsely ground, smoky and rich spiced sausage filled with emmental cheese and jalapeno.
Räksallad
- 4 tbsp Rydbergs räksallad
- About 2 tbsp peeled shrimp
Topping
- Iceberg lettuce
- Tomatoe
- Red onion
- Roasted onions
- Curry-Ketchup
- pickled jalapeño
- Grated parmesan cheese
Instructions
Prepare the owen
Set the oven to 225 degrees and preferably hot air
Prepare the topping
- Finely chop the salad
- Slice the red onion thinly
- Slice the tomato
- Grate the parmesan cheese
Prepare the mash
Since mash is the closest thing to sacredness in kiosks and you watch your recipes carefully, we will start here from a standard recipe for mashed potatoes.
- Peel and rinse 1/2 kg of floury potatoes.
- Cut the potatoes into cubes
- Boil the potatoes in salted water for 15 minutes
- Mash the potatoes (use a pusher, electric whisk or, in the worst case, a fork)
- Dilute the puree with 1 dl of cream
- Add a dollop (about 1/2 tbsp) of butter (margarine at worst, but it won't be nearly as good)
- Season with salt, nutmeg and white pepper
Grill the sausage
- Cut the sausage so that it does not split
- Grill the sausage for about 8-10 minutes in the oven at about 225 degrees so that you reach an internal temperature of about 79 degrees.
Remember to turn the sliced sausage carefully (or not at all) so that the cheddar cheese does not overflow.
Prepare the flatbread
- Brown butter
- Heat the bread gently
- Spread the bread with the browned butter

Assemble the flatbread roll
Sågmyra Hipster is served with the contents placed diagonally on the rectangular bread.
- If desired, sprinkle some barbecue seasoning over the bread
- Place the corresponding two portions of mash on top of the buttered bread in a diagonal stretch.
- Lay out a thin layer of iceberg lettuce next to the mash
- Place tomato to the side of the mash

- Fit a sausage into the mash. If necessary, press the sausage a little extra so that it gets a little further down into the mash. Remember to place the sausage diagonally on the bread.

- Place some shrimp salad on top of the sausage and mash. Be sure to take enough shrimp salad to cover both the sausage and mash
- Drizzle Curry-Ketchup on top of the sausage, mash and shrimp salad.
- Place 1 tablespoon peeled shrimp on top of the shrimp salad

- Sprinkle roasted onions

- Spread red onion on top of the salad

- Sprinkle some pickled jalapeño
- Sprinkle some grated Parmesan

Rolling
This flatbread roll is served open, but if you wish, you can season one side with barbecue seasoning and then fold it up over the contents (note that this may be considered a squeeze by conservative flatbread roll connoisseurs.).
